2 pounds boneless, skinless chicken thighs

1/2 cup soy sauce (low sodium recommended)

1/2 cup apple juice

1/4 cup brown sugar

1/4 cup ketchup

1 tablespoon Worcestershire sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ground ginger

1/2 teaspoon black pepper

2 tablespoons cornstarch

2 tablespoons cold water

Sliced green onions (for garnish)

Cooked rice (for serving)

Instructions
 

Begin by placing the chicken thighs in the bottom of your crock pot.

    In a separate bowl, whisk together the soy sauce, apple juice, brown sugar, ketchup, Worcestershire sauce, rice vinegar, garlic powder, ground ginger, and black pepper until well combined.

      Pour the sauce mixture evenly over the chicken thighs in the crock pot, ensuring all pieces are coated.

        Cover the crock pot with a lid and cook on low for 6 hours or on high for 3 hours, until chicken is tender and fully cooked.

          Once cooking is complete, carefully remove the chicken thighs from the crock pot and place them on a cutting board. Shred the chicken using two forks.

            In a small bowl, mix the cornstarch and cold water to create a slurry. Stir this into the sauce remaining in the crock pot.

              Turn the crock pot to high and let it cook for an additional 15-20 minutes, or until the sauce has thickened slightly.

                Return the shredded chicken to the crock pot, stirring until well combined with the thickened sauce.

                  Serve the Bourbon Chicken over a bed of cooked rice. Garnish with sliced green onions for a fresh touch.
