Ingredients
  

1 lb boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 (14.5 oz) can diced tomatoes, undrained

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach leaves

1 cup uncooked pasta (such as penne or shells)

Fresh basil, for garnish

Instructions
 

Place the boneless chicken breasts at the bottom of your crock pot. Season with salt, pepper, Italian seasoning, garlic powder, and onion powder.

    Add the chopped onion, minced garlic, diced tomatoes (with juice), and chicken broth to the pot. Stir to combine.

      Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds.

        About 30 minutes before serving, remove the chicken from the crock pot, shred it with two forks, and return it to the pot.

          Add the uncooked pasta and stir well. Cover and cook on low for another 30 minutes, or until the pasta is tender.

            Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix until well combined and let it heat through for about 5-10 minutes.

              Just before serving, fold in the fresh spinach leaves until wilted.

                Serve hot, garnished with fresh basil and additional Parmesan cheese if desired.
