10 oz frozen spinach, thawed and drained

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup diced tomatoes with green chilies (drained)

½ cup onion, finely chopped

½ cup bell pepper, finely chopped (red or green)

1 teaspoon garlic powder

1 teaspoon taco seasoning

Salt and pepper to taste

Tortilla chips, for serving

Instructions
 

In a large mixing bowl, combine the softened cream cheese, sour cream, and taco seasoning, and mix until smooth and well-blended.

    Add in the thawed and drained spinach, diced tomatoes with green chilies, shredded cheddar cheese, chopped onion, bell pepper, garlic powder, salt, and pepper. Mix until all ingredients are evenly incorporated.

      Transfer the mixture to a crockpot and spread it evenly.

        Cook on low for 2-3 hours or on high for 1-1.5 hours, stirring halfway through cooking to ensure even heating and melting of the cheeses.

          Once hot and bubbly, carefully serve the dip straight from the crockpot or transfer it to a serving dish.
