Crockpot Philly Cheesesteak

Ingredients
  

2 pounds of beef sirloin, thinly sliced

1 medium yellow onion, sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

8 slices provolone cheese

4 hoagie rolls

Olive oil for sautéing

Optional: sliced jalapeños, for extra heat

Instructions
 

Prepare the Beef: In a skillet over medium-high heat, add a drizzle of olive oil. Sear the sliced beef sirloin for about 2-3 minutes until browned. It doesn’t have to be fully cooked as it will finish cooking in the crockpot. Transfer the beef to the crockpot.

    Sauté the Vegetables: In the same skillet, add an additional tablespoon of olive oil. Sauté the sliced onions, green and red bell peppers, and minced garlic for about 4-5 minutes until softened. Transfer the vegetables to the crockpot with the beef.

      Add the Liquids: Pour in the beef broth, Worcestershire sauce, and sprinkle the Italian seasoning over the mixture. Season with salt and pepper to taste. Give it a good stir to combine all the ingredients.

        Cook: Cover the crockpot and set it to low heat. Let it cook for 6-8 hours or on high for 4-5 hours until the beef is tender and the flavors meld together.

          Melt the Cheese: About 30 minutes before serving, layer the provolone cheese slices on top of the beef and vegetable mixture. Cover the crockpot to allow the cheese to melt.

            Serve: Once the cheese is melted and the mixture is bubbly, use a slotted spoon to portion the cheesesteak filling into the hoagie rolls. If desired, add sliced jalapeños for an extra kick.
