Crockpot Pierogi Casserole

Ingredients
  

1 package (16 oz) frozen pierogies (potato and cheese or your favorite flavor)

1 large onion, diced

2 cups of shredded cabbage

2 cups of shredded sharp cheddar cheese

1 cup sour cream

1 cup vegetable broth

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Chopped fresh chives for garnish (optional)

Sauté the Onion: In a skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 5 minutes.

    Layer the Ingredients: Place half of the frozen pierogies in the bottom of the crockpot. Top with half of the sautéed onions, half of the shredded cabbage, and half of the shredded cheese.

      Season and Add Liquid: In a bowl, mix the vegetable broth, sour cream, garlic powder, paprika, salt, and pepper. Pour half of this mixture evenly over the layers in the crockpot.

        Repeat the Layers: Add the remaining pierogies, followed by the rest of the onions, cabbage, and cheese. Pour the remaining broth mixture on top, ensuring all ingredients are moistened.

          Cook: Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours, until everything is heated through and the pierogies are tender.

            Serve: Once done, stir gently to combine all the layers. Scoop portions onto plates and garnish with fresh chives if desired.
