1 pound Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, undrained

2 cups baby spinach

2 medium carrots, sliced

1 bell pepper, chopped (any color)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

1 package (9 oz) cheese tortellini, fresh or frozen

Salt and pepper to taste

1/4 cup freshly grated Parmesan cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

In a skillet over medium heat, cook the Italian sausage until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary and transfer the sausage into the crockpot.

    Add the diced onion, minced garlic, sliced carrots, chopped bell pepper, and Italian seasoning to the crockpot. Stir to combine.

      Pour in the chicken broth and add the diced tomatoes with their juices. Stir until well mixed.

        Season with red pepper flakes (if using), salt, and pepper to taste.

          Cover and cook on low for 6-7 hours or on high for 3-4 hours.

            About 15-20 minutes before serving, stir in the tortellini and baby spinach. Cover and continue to cook until the tortellini are tender.

              Serve hot, topped with freshly grated Parmesan cheese and a sprinkle of chopped parsley.
