For a tasty Crockpot Southwest Chicken, you need key ingredients. Start with 1.5 lbs of boneless, skinless chicken breasts. This provides the main protein. You will also need 1 can of black beans and 1 can of corn. Both add fiber and flavor. Use 1 can of diced tomatoes with green chilies for a spicy kick. Don't forget a medium red bell pepper and a small yellow onion. These veggies add color and taste. Garlic gives it depth, so include 2 cloves, minced. For spices, use 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of smoked paprika. Finish with salt, pepper, and the juice of 1 lime. Fresh cilantro is a great garnish. You can add avocado slices and tortilla chips for extra crunch.

Ingredients

1.5 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium red bell pepper, diced

1 small yellow onion, chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 lime, juiced

Fresh cilantro, chopped (for garnish)

Avocado slices (optional, for topping)

Tortilla chips (for serving)

Instructions

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot. Season with salt and pepper.

Add Vegetables: Layer the black beans, corn, diced tomatoes (with juices), diced red bell pepper, chopped onion, and minced garlic over the chicken.

Spice It Up: In a small bowl, mix together the chili powder, cumin, and smoked paprika, then sprinkle this spice blend over the layered ingredients in the crockpot.

Cook: Cover the crockpot with its lid and set it on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and shreds easily.

Shred Chicken: About 30 minutes before serving, shred the chicken directly in the crockpot using two forks and mix it into the sauce and vegetables.

Add Lime Juice: Squeeze fresh lime juice over the mixture and stir to combine. Taste and adjust seasoning if necessary.

Serve: Ladle the Southwest chicken into bowls and garnish with fresh cilantro and avocado slices, if desired. Serve with tortilla chips on the side for added crunch.
