2 lbs pork shoulder, cut into large chunks

1/2 cup fresh orange juice

1/4 cup fresh lime juice

8 cloves garlic, minced

1 tablespoon fresh oregano, chopped

1 tablespoon cumin powder

1/4 teaspoon cayenne pepper (adjust to taste)

1/2 cup olive oil

Salt and black pepper to taste

Fresh cilantro for garnish

Marinate the Pork: In a large mixing bowl, combine the orange juice, lime juice, minced garlic, oregano, cumin, cayenne pepper, and olive oil. Whisk until well-mixed.

    Prepare the Meat: Season the pork chunks with salt and black pepper. Place the pork into a resealable plastic bag or a glass dish and pour the marinade over the top. Seal the bag or cover the dish and refrigerate for at least 4 hours or overnight for maximum flavor.

      Preheat the Oven: When ready to cook, preheat your oven to 300°F (150°C).

        Bake the Pork: Place the marinated pork and all the marinade into a large Dutch oven or oven-safe pot. Cover it with a lid or aluminum foil. Bake in the preheated oven for about 3 to 4 hours, until the pork is tender and easily shredded with a fork.

          Shred the Pork: Remove the pot from the oven. Carefully take the pork chunks out and place them on a cutting board. Using two forks, shred the pork into bite-sized pieces.

            Reduce the Sauce (optional): If desired, strain the remaining juices in the pot through a fine mesh sieve into a saucepan. Simmer on medium heat until slightly reduced to create a concentrated sauce; this enhances the flavors.

              Serve: Transfer the shredded pork back to the pot, mixing it with some of the reduced sauce to taste. Serve hot.
