1 can (15 oz) white beans (such as cannellini or great northern), drained and rinsed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 carrot, diced

1 celery stalk, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

4 cups vegetable broth

1 bay leaf

1 cup diced tomatoes (canned or fresh)

Salt and pepper to taste

Fresh cilantro, for garnish

Avocado slices, for topping

Instructions
 

Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic, bell pepper, carrot, and celery. Cook for an additional 5 minutes, stirring occasionally.

      Add the ground cumin and smoked paprika, stirring to toast the spices for about 1 minute.

        Pour in the vegetable broth and add the bay leaf. Bring the mixture to a gentle boil.

          Add the diced tomatoes and the rinsed white beans, then reduce the heat to low. Let the soup simmer for 25-30 minutes to allow the flavors to meld.

            Remove the bay leaf, and season with salt and pepper to taste. If you prefer a creamier texture, use an immersion blender to blend a portion of the soup and create a thicker consistency (optional).

              Serve hot, garnished with fresh cilantro and avocado slices on top.
