2 medium beetroots, roasted and diced

1 large cucumber, thinly sliced

1 small red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup walnuts, roughly chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon fresh dill, chopped

Roast the Beetroots: Preheat your oven to 400°F (200°C). Wrap the beetroots in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes, or until they are tender when pierced with a fork. Allow them to cool before peeling and dicing.

    Prepare the Vegetables: While the beetroots are roasting, prepare the cucumber and red onion. Thinly slice the cucumber and finely chop the red onion. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, chopped dill, salt, and pepper to create a refreshing dressing.
