Instructions
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.
In a microwave-safe bowl, combine the unsalted butter and chocolate chips. Heat in 30-second intervals, stirring in between, until melted and smooth.
In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until slightly thickened and pale in color.
Stir in the melted chocolate mixture into the egg mixture until fully combined.
Add the flour, espresso powder, vanilla extract, and a pinch of salt. Mix until just combined, being careful not to overmix.
Divide the batter evenly among the prepared ramekins.
Place the ramekins on a baking sheet and bake in the preheated oven for 12 to 14 minutes, until the edges are firm but the center is still soft.
Remove from the oven and let rest for 1 minute. Carefully invert each ramekin onto a plate and gently lift them off.
Dust with powdered sugar and top with fresh berries if desired. Serve immediately for that glorious molten center!
