Ingredients

4 salmon fillets

Salt and black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup heavy cream

½ cup grated Parmesan cheese

Fresh basil, for garnish

Instructions

Prepare the Salmon: Season the salmon fillets with salt and black pepper on both sides.

Cook the Salmon: In a large skillet over medium heat, add the olive oil. Once hot, add the salmon fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the salmon from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add Vegetables: Stir in the Italian seasoning, cherry tomatoes, and spinach. Cook for 3-4 minutes until the tomatoes soften and the spinach wilts.

Create the Creamy Sauce: Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce becomes creamy. Season with additional salt and pepper to taste.

Combine: Place the cooked salmon back into the skillet, spooning the creamy sauce over the top. Let it simmer for another 2-3 minutes to warm the salmon through.

Serve: Garnish with fresh basil before serving. Enjoy with pasta, rice, or bread to soak up the sauce!
