1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon garlic powder

1/2 cup shredded mozzarella cheese

1/2 cup diced pepperoni (or any toppings of your choice)

1/2 cup pizza sauce (plus extra for serving)

1/4 cup milk

1/4 cup olive oil

1 large egg

Fresh basil leaves, for garnish

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Lightly grease a muffin tin with cooking spray or olive oil.

    Prepare Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and half of the mozzarella cheese until well combined.

      Combine Wet Ingredients: In a separate bowl, mix the milk, olive oil, and egg until fully blended.

        Mix Everything Together: Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined. Avoid over-mixing.

          Add Toppings: Gently fold in the diced pepperoni (or chosen toppings) and the remaining mozzarella cheese into the batter.

            Fill Muffin Tin: Spoon the batter into each muffin cup, filling them about halfway. Then, add a small spoonful (about 1 teaspoon) of pizza sauce to the center of each cupcake. Top with another layer of batter to cover the sauce completely.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the cupcakes are golden brown and a toothpick inserted into the center comes out clean.
