1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

8 corn tortillas

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent (about 2-3 minutes).

      Season the Meat: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned (about 5-7 minutes). Drain any excess fat. Stir in cumin, chili powder, salt, and pepper.

        Assemble the Enchiladas: Remove the skillet from heat. Take a corn tortilla, add a generous spoonful of the beef mixture and a sprinkle of cheese in the center. Roll up the tortilla tightly and place seam-side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas.

          Add Sauce and Cheese: Pour the enchilada sauce evenly over the rolled enchiladas. Sprinkle the remaining cheese on top.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.

              Serve: Remove from the oven, garnish with fresh cilantro, and serve hot with sour cream on the side.
