3 cups cooked, shredded chicken

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 can (10 oz) diced tomatoes with green chilies, undrained

1 teaspoon taco seasoning

12 corn tortillas, cut into quarters

2 cups shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 small onion, diced

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell peppers, sautéing until softened, about 5-7 minutes. Set aside.

      Prepare Chicken Mixture: In a large mixing bowl, combine shredded chicken, cream of mushroom soup, cream of chicken soup, sour cream, diced tomatoes with green chilies, taco seasoning, sautéed vegetables, salt, and pepper. Mix well to blend.

        Layer the Casserole: In a greased 9x13 inch baking dish, spread a thin layer of the chicken mixture on the bottom. Place a layer of corn tortilla quarters on top, followed by a sprinkle of cheddar cheese. Repeat the layers (chicken mixture, tortillas, cheese) until all the ingredients are used, finishing with a layer of cheese on top.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

            Cool & Garnish: Let the casserole sit for about 10 minutes before serving. Garnish with fresh cilantro if desired.
