Ingredients

4 medium russet potatoes, washed and peeled

1 cup sour cream

½ cup cream cheese, softened

¼ cup unsalted butter, melted

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon

½ cup chopped green onions

½ teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup mini marshmallows (optional for a sweet twist)

¼ cup chopped pecans (for garnish)

Instructions

Preheat your oven to 375°F (190°C).

Cut the peeled potatoes into even chunks and bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 15-20 minutes. Drain and return to the pot.

In a large mixing bowl, combine the sour cream, cream cheese, melted butter, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.

Mash the cooked potatoes into the mixture until creamy and smooth. If you want a bit of a sweet twist, fold in the mini marshmallows at this stage for a unique flavor contrast.

Transfer the potato mixture to a greased baking dish and spread it out evenly.

Top with additional shredded cheddar cheese if desired, and bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

Remove from the oven and let cool for a few minutes. Garnish with chopped pecans before serving.
