4 plain bagels, sliced in half

6 large eggs

1 cup heavy cream

1 cup shredded cheese (cheddar or Swiss)

1 cup diced vegetables (spinach, bell peppers, and onions)

1 cup diced cooked ham or cooked bacon (optional)

Salt and pepper to taste

1 tablespoon olive oil

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced vegetables and sauté for about 5-7 minutes until softened. If using ham or bacon, add it to the skillet and cook briefly until warmed through. Remove from heat and let cool slightly.

      In a mixing bowl, whisk together the eggs and heavy cream until well combined. Season with salt and pepper.

        Fold in the sautéed vegetable and meat mixture, then stir in the shredded cheese until everything is evenly distributed.

          Arrange the bagel halves on a baking sheet, cut side up. Carefully spoon the quiche mixture into each bagel half, filling them generously.

            Bake in the preheated oven for 25-30 minutes, or until the egg mixture is set and the bagels are golden brown.

              Once out of the oven, allow them to cool slightly before transferring to a serving platter.
