Ingredients
  

1 can (8 oz) pineapple slices in juice, drained

1/3 cup brown sugar

2 tablespoons butter, melted

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/4 cup unsalted butter, melted (for crust)

1 (8 oz) package cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Maraschino cherries for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

    In a small bowl, mix 2 tablespoons of melted butter with 1/3 cup of brown sugar until combined.

      Spoon about 1 tablespoon of the butter-sugar mixture into the bottom of each muffin liner.

        Place a pineapple slice on top of the mixture in each cup, then press gently.

          In a medium bowl, combine graham cracker crumbs, granulated sugar, and 1/4 cup melted butter. Stir until crumbly.

            Divide the crumb mixture evenly over the pineapple slices, pressing down gently to form a crust layer.

              In another bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

                In a separate bowl, whip the heavy cream until stiff peaks form.

                  Gently fold the whipped cream into the cream cheese mixture until fully combined.

                    Spoon the cheesecake mixture on top of each crust in the muffin tin, filling to the edge.

                      Chill in the refrigerator for at least 3 hours or until set.

                        For serving, carefully remove cheesecakes from the muffin tin. If desired, garnish with a maraschino cherry on top of each treat.
