2 lbs Yukon Gold potatoes, peeled and cubed

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup sour cream

1/4 cup unsalted butter, melted

1 large onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon black pepper

1 teaspoon salt

1/4 cup fresh chives, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, add the cubed Yukon Gold potatoes and cover them with cold water. Add a teaspoon of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and set aside.

    Sauté the Aromatics: In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and cook until soft and translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Make the Cream Mixture: In a large bowl, combine the heavy cream, sour cream, melted butter, paprika, black pepper, and salt. Mix well until smooth.

        Combine Ingredients: Gently fold the cooked potatoes into the cream mixture, followed by the sautéed onion and garlic. Ensure the potatoes are well coated. Stir in 1/2 of the sharp cheddar and all of the Parmesan cheese.

          Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Pour the potato mixture into a greased 9x13 inch baking dish. Spread evenly and top with the remaining sharp cheddar cheese.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh chives before serving.
