2 lbs Yukon Gold potatoes, peeled and cubed

1 cup heavy cream

1 cup sharp cheddar cheese, grated

1 cup Gruyère cheese, grated

1/2 cup sour cream

4 cloves garlic, minced

1/4 cup chives, finely chopped

1/4 cup Parmesan cheese, grated

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons unsalted butter

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Potatoes: In a large pot, bring salted water to a boil. Add the cubed Yukon Gold potatoes and cook until tender, about 15 minutes. Drain and set aside.

      Mix Cream and Cheeses: In a large mixing bowl, whisk together heavy cream, sour cream, minced garlic, smoked paprika, salt, and pepper.

        Combine Ingredients: Fold in the cooked potatoes, half of the sharp cheddar cheese, half of the Gruyère cheese, and chopped chives until well combined.

          Transfer to Baking Dish: Grease a 9x13 inch baking dish with butter. Pour the potato mixture into the dish and spread it evenly.

            Add Cheese Topping: Sprinkle the remaining cheddar and Gruyère cheeses evenly on top, followed by the grated Parmesan cheese.

              Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

                Garnish and Serve: Remove from oven, let it cool for a few minutes, and garnish with additional chives before serving. Enjoy your creamy, cheesy delight!
