3 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

1 teaspoon sugar

1 teaspoon salt

1 cup warm water (110°F/45°C)

2 tablespoons olive oil, plus extra for drizzling

1 cup dill pickles, diced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 teaspoon garlic powder

½ teaspoon black pepper

Sea salt for topping

Instructions
 

In a small bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture along with 2 tablespoons of olive oil.

      Mix with a wooden spoon until a shaggy dough forms.

        Lightly flour a clean surface and knead the dough for about 8-10 minutes until smooth and elastic.

          Form the dough into a ball and place it in a greased bowl. Cover with a kitchen towel or plastic wrap and let it rise in a warm area for about 1 hour, or until doubled in size.

            Preheat your oven to 425°F (220°C).

              Once the dough has risen, punch it down and transfer it to a lined baking sheet. Gently stretch and shape it into a rectangle, about ½ inch thick.

                Make small indentations all over the surface of the dough using your fingers.

                  In a bowl, mix the diced pickles, chopped dill, garlic powder, and black pepper. Sprinkle this mixture evenly over the top of the focaccia, allowing some of it to fill the indentations.

                    Drizzle a bit more olive oil over the top and sprinkle sea salt generously.

                      Let the dough rise again for about 20-30 minutes, then bake in the preheated oven for 20-25 minutes, or until golden brown.

                        Remove from the oven and let cool slightly before slicing.
