Double Cheesy Smash Burger with Special New York Sauce

1 lb ground beef (80/20 blend)

4 slices of sharp cheddar cheese

4 slices of pepper jack cheese

Salt and pepper to taste

4 burger buns (preferably brioche)

1 cup lettuce, shredded

1 large tomato, sliced

1/2 red onion, thinly sliced

Special New York Sauce:

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon ketchup

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Prepare the Sauce: In a small bowl, mix together the mayonnaise, Dijon mustard, ketchup, smoked paprika, garlic powder, onion powder, salt, and pepper. Whisk until smooth. Set aside.

    Shape the Patties: Divide the ground beef into 8 equal portions (about 2 oz each) and gently form them into balls. Do not overwork the meat; you want it tender.

      Preheat the Griddle or Skillet: Heat a large cast-iron skillet or griddle over medium-high heat until hot. If you have a flat top, that’s perfect for smash burgers.

        Smash the Patties: Place half of the beef balls on the griddle, spacing them apart. Use a heavy spatula or burger press to smash each ball down to about 1/2 inch thick. Season generously with salt and pepper.

          Cook the Burgers: Allow the patties to cook without moving them for about 2-3 minutes until a crust forms. Flip the patties over, and immediately place two slices of cheddar and two slices of pepper jack cheese on each patty. Cook for another 1-2 minutes until the cheese melts.

            Toast the Buns: While the burgers are cooking, split the burger buns in half and toast them on another pan or griddle until golden brown.

              Assemble the Burgers: On the bottom half of each toasted bun, spread a generous amount of the special New York sauce. Place the cheesy smash burger on top, followed by shredded lettuce, a slice of tomato, and a few rings of red onion. Top with the other half of the bun.

                Serve: Serve the burgers immediately while hot, accompanied by crispy fries or your favorite side dish.
