Ingredients

1 cup dulce de leche

2 cups heavy cream

3 large egg whites

1/4 cup granulated sugar

1 teaspoon vanilla extract

Pinch of salt

Shaved chocolate or chocolate curls for garnish (optional)

Instructions

In a mixing bowl, combine the dulce de leche with the vanilla extract. Use a whisk to blend until smooth and creamy. Set aside.

In a separate large bowl, pour in the heavy cream and beat with an electric mixer on medium-high speed until soft peaks form, about 3-4 minutes. Be careful not to over-whip.

In another clean bowl, whisk the egg whites and a pinch of salt using a mixer until frothy. Gradually add the granulated sugar while whisking until stiff peaks form, about 3-5 minutes.

Gently fold one-third of the whipped cream into the dulce de leche mixture using a spatula. This will lighten the mixture.

Carefully fold in the remaining whipped cream until just combined, being careful not to deflate the air from the mixture.

Finally, fold in the whipped egg whites, continuing to be gentle to maintain the mousse's fluffiness.

Once fully combined, transfer the mousse into serving cups or glasses. Refrigerate for at least 3 hours, or until set.

Before serving, garnish with shaved chocolate or chocolate curls for an elegant touch.
