Ingredients

8 large eggs

2 cups milk

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup diced cooked ham

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

2 cups shredded cheese (cheddar and mozzarella blend)

5 cups day-old croissants or brioche, torn into pieces

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, onion powder, salt, and black pepper until fully combined.

Add the diced ham, chopped spinach, and halved cherry tomatoes to the egg mixture, stirring gently to distribute the ingredients evenly.

Fold in the torn croissant or brioche pieces, ensuring they're well coated with the egg mixture.

Pour the entire mixture into the prepared baking dish, spreading it out evenly.

Sprinkle the shredded cheese on top, ensuring even coverage across the casserole.

Bake in the preheated oven for 30-35 minutes or until the casserole is set and golden brown on top.

Once baked, remove from the oven and let it cool for a few minutes before cutting into squares.
