12 oz penne pasta

1 lb Cajun sausage (such as Andouille), sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

1 cup diced tomatoes (canned or fresh)

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet or saucepan over medium heat, add the olive oil. Once hot, add the sliced Cajun sausage. Cook for about 5-7 minutes, or until browned. Remove the sausage from the pan and place it aside.

      Cook the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until the onion is translucent. Add the minced garlic and cook for another minute until fragrant.

        Make the Sauce: Pour in the chicken broth and diced tomatoes, scraping any brown bits from the bottom of the skillet for added flavor. Stir in the Cajun seasoning, smoked paprika, salt, and black pepper. Let the mixture simmer for about 5 minutes.

          Add Cream and Cheese: Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese. Allow the sauce to simmer gently for about 3-4 minutes until it thickens slightly.

            Combine: Add the browned sausage back into the skillet along with the cooked penne pasta. Toss everything together until well-coated with the creamy sauce. Adjust seasoning as needed.
