Ingredients

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon chili powder

1/4 cup olives, chopped (green or black)

1/4 cup raisins (optional, for sweetness)

1 tablespoon olive oil

Salt and pepper to taste

1 package refrigerated pie crusts (or homemade dough if preferred)

1 egg (for egg wash)

Fresh cilantro or parsley for garnish

Instructions

Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.

Cook the Beef: Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Drain any excess fat.

Spice It Up: Mix in the cumin, paprika, chili powder, salt, and pepper. Stir to combine and let it cook for another 2-3 minutes. Add in chopped olives and raisins (if using) and mix well. Remove from heat and let the filling cool.

Prepare the Dough: Preheat your oven to 400°F (200°C). Roll out your pie crusts on a lightly floured surface. Using a round cutter or a bowl, cut out circles (about 5-6 inches in diameter).

Fill the Empanadas: Place a generous tablespoon of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape. Pinch the edges tightly to seal. You can also crimp the edges with a fork for an extra decorative touch.

Bake: Place the empanadas on a baking sheet lined with parchment paper. Beat the egg in a small bowl and brush the egg wash over the tops of the empanadas for a golden finish. Bake for approximately 25-30 minutes, or until they are golden brown.

Cool and Serve: Once out of the oven, allow the empanadas to cool for a few minutes. Garnish with fresh cilantro or parsley before serving.
