Ingredients
  

6 large eggs

1/2 cup milk (dairy or non-dairy)

1 cup spinach, chopped

1/2 cup bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar, mozzarella, or a blend)

1/4 cup cooked bacon or sausage, crumbled (optional)

Salt and pepper to taste

Cooking spray or olive oil for greasing the muffin tin

Instructions
 

Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or a light drizzle of olive oil to prevent sticking.

    In a large mixing bowl, whisk together the eggs and milk until fully combined. Season with salt and pepper to taste.

      Add the chopped spinach, diced bell pepper, halved cherry tomatoes, and crumbled bacon or sausage (if using) to the egg mixture. Stir until all the ingredients are well incorporated.

        Evenly distribute the mixture into the greased muffin tins, filling each cup about 3/4 full.

          Sprinkle shredded cheese on top of each muffin cup for an extra cheesy flavor.

            Bake in the preheated oven for about 20-25 minutes, or until the egg muffins are puffed and a toothpick inserted into the center comes out clean.

              Once baked, allow the muffins to cool for about 5 minutes in the pan before gently running a knife around the edges to loosen and remove them.

                Serve warm or let cool completely before storing in an airtight container in the refrigerator for meal prep.
