Ingredients

2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese, shredded

1/2 cup spinach, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package of refrigerated puff pastry (2 sheets)

1 egg, beaten (for egg wash)

Sesame seeds (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, mozzarella cheese, chopped spinach, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.

Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheets to reduce thickness slightly. Cut each sheet into 4 equal squares.

Fill the Pastry Squares: Place a generous spoonful of the cheesy chicken mixture in the center of each puff pastry square.

Seal the Pockets: Fold the corners of the pastry over the filling to create a pocket and pinch the edges tightly to seal. You can use a fork to create a decorative edge if desired.

Brush and Bake: Place the pockets on a baking sheet lined with parchment paper. Brush the tops with the beaten egg and sprinkle sesame seeds over them.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the pockets are golden brown and puffed.

Serve: Allow to cool slightly before serving.
