2 cups fresh or frozen pitted cherries

1/2 cup sugar (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 cup water

1 tablespoon cornstarch (optional, for thicker consistency)

2 tablespoons water (for cornstarch slurry, if using)

Instructions
 

In a medium saucepan, combine the cherries, sugar, lemon juice, and 1/2 cup of water. Stir gently to mix the ingredients.

    Place the saucepan over medium heat and bring the mixture to a gentle boil while stirring occasionally.

      Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes. This will allow the cherries to soften and release their juices.

        If you prefer a thicker compote, mix the cornstarch with 2 tablespoons of water in a small bowl to create a slurry. Add this slurry to the saucepan and stir well. Continue to simmer for an additional 2-3 minutes until the compote thickens to your liking.

          Once the cherries are soft and the compote has reached your desired consistency, remove it from the heat and stir in the vanilla extract.

            Allow the compote to cool slightly before transferring it to a jar or a bowl. It can be served warm or chilled, and it will thicken further as it cools.
