1 lb flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

2 bell peppers (one red, one green), sliced

3 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon rice vinegar

1 tablespoon sugar

½ cup beef broth

Cooked white rice or noodles for serving

Salt and pepper to taste

Green onions, chopped for garnish

Instructions
 

In a mixing bowl, marinate the thinly sliced flank steak in soy sauce, oyster sauce, and cornstarch for about 15-20 minutes. This will help tenderize the meat and give it great flavor.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated steak slices, and stir-fry until browned and just cooked through, about 3-4 minutes. Remove the steak from the pan and set aside.

      In the same skillet, add the remaining tablespoon of oil. Toss in the sliced onions and bell peppers; stir-fry for 2-3 minutes until they start to soften.

        Add the minced garlic and ginger to the pan, cooking for an additional 30 seconds until fragrant.

          Return the cooked steak to the skillet. Pour in the beef broth, rice vinegar, and sugar. Stir everything together and let it simmer for another 2-3 minutes, so the flavors meld and the sauce slightly thickens.

            Season with salt and pepper to taste. If needed, you can add a bit more soy sauce for extra flavor.

              Serve the pepper steak over warm cooked white rice or noodles, and garnish with chopped green onions.
