Ingredients
  

250g pasta (spaghetti or penne)

200g Spanish chorizo, sliced

1 tablespoon olive oil

1 small onion, finely chopped

3 garlic cloves, minced

1 can (400g) diced tomatoes

1 teaspoon smoked paprika

1/2 teaspoon chili flakes (adjust for spice level)

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and sauté for about 4-5 minutes until it starts to crisp and release its oil.

      Add Aromatics: Add the chopped onion to the skillet and cook for 3-4 minutes until it becomes translucent. Then add the minced garlic and sauté for another minute until fragrant.

        Create the Sauce: Pour in the diced tomatoes, smoked paprika, and chili flakes. Stir well to combine all the ingredients. Let it simmer for about 10 minutes, allowing the flavors to meld. If the sauce becomes too thick, add a splash of the reserved pasta water.

          Combine Pasta and Sauce: Toss the cooked pasta into the skillet with the chorizo and tomato sauce. Stir gently to coat the pasta evenly, adding more reserved pasta water if needed to reach your desired consistency.

            Season and Serve: Taste and season with salt and black pepper as necessary. Serve hot, garnished with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
