Ingredients
  

2 large cucumbers, thinly sliced

1 small red onion, finely sliced

1 cup cherry tomatoes, halved

1/4 cup fresh dill, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon honey

Salt and pepper to taste

Instructions
 

Start by washing the cucumbers thoroughly. Peel them if desired, then slice them thinly either with a knife or a mandoline for uniform thickness.

    In a large mixing bowl, combine the sliced cucumbers, red onion, cherry tomatoes, and fresh dill. If you're adding feta cheese, sprinkle it in at this stage.

      In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, honey, salt, and pepper until emulsified and well combined. Adjust seasoning to taste.

        Pour the dressing over the cucumber mixture and gently toss until all the vegetables are evenly coated.

          Allow the salad to rest for at least 15 minutes at room temperature or refrigerate it for 30 minutes. This helps the flavors to meld beautifully.
