4 boneless, skinless chicken breasts

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

2 tablespoons Dijon mustard

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    In a mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, salt, and black pepper. Mix well to ensure even distribution of the seasonings.

      In another bowl, whisk together the beaten eggs and Dijon mustard until well combined.

        Take each chicken breast and dip it first into the egg mixture, ensuring it's fully coated. Allow any excess to drip off.

          Next, place the chicken breast in the breadcrumb mixture, pressing down gently to ensure a good crust sticks to the chicken. Repeat this for all chicken breasts.

            Arrange the coated chicken breasts on the prepared baking sheet. Drizzle the tops with olive oil to help the crust get golden and crispy.

              Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown. The internal temperature of the chicken should reach 165°F (75°C).

                Once baked, remove from the oven and let the chicken rest for a few minutes before slicing.

                  Garnish with freshly chopped parsley for a pop of color and added flavor.
