Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk (or regular milk with a splash of lemon juice)

Zest of 2 lemons

⅓ cup fresh lemon juice

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter and a sprinkle of flour.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

Incorporate Eggs: Add the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl to ensure everything is well combined.

Add Lemon: Mix in the lemon zest and fresh lemon juice until well incorporated.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with the buttermilk. Start and finish with the flour mixture, mixing until just combined. Avoid overmixing.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Dust: Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely. Once cooled, dust the top with powdered sugar if desired.
