250g pennette pasta

150g pancetta, diced

200g asparagus, trimmed and cut into 2-inch pieces

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup olive oil

Salt and pepper to taste

1 tablespoon lemon juice (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pennette pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Sauté Pancetta: In a large skillet over medium heat, add the diced pancetta. Cook until the pancetta is crispy and golden, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the pan.

      Prepare Asparagus: In the same skillet, add the trimmed asparagus. Sauté in the pancetta fat for about 3-4 minutes, until tender but still vibrant green. Add the minced garlic and cook for an additional minute, stirring to avoid burning.

        Combine Ingredients: Return the crispy pancetta to the skillet. Add the drained pennette pasta, olive oil, and half of the reserved pasta water. Toss to combine everything thoroughly over low heat. If the mixture seems dry, gradually add more reserved pasta water until you reach your desired consistency.

          Add Parmesan: Stir in the grated Parmesan cheese until it melts and coats the pasta. Season with salt and pepper. If using lemon juice, add it now for a refreshing finish.
