Ingredients
  

1 cup granulated sugar

1/4 cup light corn syrup

1/4 cup water

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup mini marshmallows

1 cup milk chocolate chips

1 tablespoon vegetable oil

1/2 cup finely crushed graham crackers (for topping)

Instructions
 

Prepare a 9x9-inch square baking pan by lining it with parchment paper, allowing it to hang over the edges for easy removal later.

    In a medium saucepan over medium heat, combine the granulated sugar, light corn syrup, water, and salt. Stir until the sugar is dissolved and the mixture comes to a gentle boil.

      Stop stirring and allow the mixture to boil without stirring until it reaches the soft-ball stage (240°F / 115°C) on a candy thermometer, about 5-7 minutes.

        Remove the saucepan from heat and stir in the vanilla extract. Allow to cool slightly for 5 minutes.

          Add the mini marshmallows into the syrup mixture and stir until they melt and the mixture becomes smooth and glossy.

            Pour the mixture into the prepared baking pan and spread it evenly with a spatula. Allow it to set at room temperature for about 1-2 hours or until firm.

              Once set, use the parchment paper to lift the candy out of the pan and onto a cutting board. Cut into squares (about 1.5 inches) using a sharp knife.

                In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.

                  Dip each scotchmallow square into the melted chocolate, allowing excess chocolate to drip off. Place them on a wire rack or parchment paper to set.

                    While the chocolate is still soft, sprinkle the finely crushed graham crackers on top for added texture and flavor.
