2 cups fresh strawberries, hulled and sliced

1/4 cup sugar

1 teaspoon vanilla extract

2 cups sparkling water or soda (lemon-lime or club)

2 cups vanilla ice cream

Fresh mint leaves for garnish

Extra strawberries for decoration

Instructions
 

In a medium bowl, combine the sliced strawberries and sugar. Stir gently to coat the strawberries with sugar and let them sit for about 15 minutes until they release their juices.

    After 15 minutes, add the vanilla extract to the strawberries and mix well. This will enhance the fresh strawberry flavor.

      In a large serving glass or float glass, layer 1/4 cup of the sugared strawberries at the bottom.
