1 lb ground turkey or beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

2 cups shredded cheddar cheese

1 cup cooked quinoa (or rice)

1 cup salsa

1/2 cup chopped fresh cilantro

1 avocado, diced (for topping)

Sour cream (for topping, optional)

Tortilla chips (for serving)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet over medium heat, cook the ground turkey or beef until browned, breaking it up into small pieces as it cooks (about 5-7 minutes).

      Stir in the taco seasoning and add the diced tomatoes (with juices), black beans, corn, and cooked quinoa (or rice). Mix well and let simmer for 5 minutes.

        Remove from heat and stir in 1 cup of shredded cheddar cheese and 1/2 cup of salsa until well combined.

          Transfer the mixture into a greased 9x13 inch baking dish and spread it out evenly.

            Sprinkle the remaining cheese on top and cover the dish with foil.

              Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Once out of the oven, let it cool for a few minutes. Top with fresh cilantro, diced avocado, and additional salsa or sour cream as desired.

                  Serve warm with tortilla chips on the side for dipping.
