1 pound ground beef

1 teaspoon chili powder

1 teaspoon cumin

1 cup black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 can (10 oz) enchilada sauce (divided)

8 small flour tortillas

1 cup shredded cheddar cheese

1 cup sour cream

Fresh cilantro for garnish (optional)

Salt and pepper to taste

Preheat the oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat.

      Add Aromatics: Stir in the chopped onion and minced garlic. Cook until the onion is softened (about 3 minutes).

        Season: Add the chili powder, cumin, salt, and pepper. Mix well to combine.

          Incorporate Beans and Corn: Add the black beans and corn to the beef mixture. Stir until everything is evenly mixed and heated through (about 2 minutes).

            Fill Tortillas: Take a tortilla, spoon a generous amount of the beef mixture into the center, sprinkle with shredded cheddar cheese, and roll it up tightly. Repeat this with all tortillas.

              Assemble in Baking Dish: Pour half of the enchilada sauce on the bottom of a 9x13-inch baking dish. Place the rolled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top and sprinkle with any remaining cheese.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.
