2 large eggs

2 slices of ham (preferably honey-baked)

2 slices of whole grain bread

1 slice of cheddar cheese

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

Salt and pepper to taste

1 tablespoon butter

Fresh arugula or spinach for freshness

Tomato slices (optional)

Instructions
 

Prepare the Condiments: In a small bowl, mix the mayonnaise and Dijon mustard together until well combined. Set aside.

    Cook the Ham: In a skillet over medium heat, add the slices of ham and cook for about 2 minutes on each side until they are warmed through and slightly crispy. Remove from the skillet and set aside.

      Cook the Eggs: In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and pepper. Cook for about 3-4 minutes until the whites are set but the yolks are still runny (or cook longer if you prefer firmer yolks).

        Assemble the Sandwich: Toast the bread slices in a toaster or on a skillet until golden brown. Spread the mayo-Dijon mixture on one side of each slice of bread.

          Layer the Sandwich: On one slice of bread, layer the crispy ham, followed by the slice of cheddar cheese, the cooked egg, fresh arugula or spinach, and tomato slices if using. Top with the other slice of bread.

            Press and Heat: Optional - Place the sandwich back in the skillet for an additional minute on each side to melt the cheese further and toast the outer edges for a crispy finish.
