4 cups chicken or vegetable broth

2 large eggs

1 tablespoon cornstarch

2 tablespoons water

1 teaspoon fresh ginger, grated

2 green onions, thinly sliced

1 cup baby spinach or bok choy, chopped

1 tablespoon soy sauce

1 teaspoon sesame oil

Salt and white pepper to taste

Optional: a few drops of sriracha or chili oil for heat

Instructions
 

In a medium saucepan, bring the chicken or vegetable broth to a gentle simmer over medium heat.

    While the broth is simmering, whisk the cornstarch and water together in a small bowl until smooth. Gradually stir this mixture into the broth to slightly thicken it.

      Add fresh ginger to the broth and let it cook for 2-3 minutes to infuse the flavor.

        In a separate bowl, beat the eggs until they are well mixed.

          Once the broth is simmering, slowly pour in the beaten eggs in a thin stream, stirring gently with a fork or chopsticks to create silky ribbons in the soup.

            Add the chopped spinach (or bok choy) and the sliced green onions to the soup, cooking for another 1-2 minutes until the greens are wilted and tender.

              Season the soup with soy sauce, sesame oil, salt, and white pepper to taste. For an added kick, drizzle in a few drops of sriracha or chili oil if desired.

                Ladle the soup into bowls and garnish with extra green onions or chili oil for visual appeal and flavor.
