6 large eggs

3 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 teaspoon Dijon mustard

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1 teaspoon lemon juice

Salt and pepper to taste

4 slices of whole grain bread (or your choice)

Lettuce leaves (optional, for crunch)

Instructions
 

Boil the Eggs: Place the eggs in a pot and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and let simmer for 10 minutes.

    Cool the Eggs: After 10 minutes, remove the pot from heat and carefully transfer the eggs to a bowl of ice water. Let them cool for at least 5 minutes to stop the cooking process.

      Prepare the Egg Mixture: Peel the cooled eggs and chop them into small pieces. In a medium bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, chopped dill, chives, and lemon juice. Mix well to create a creamy base.

        Combine Ingredients: Add the chopped eggs to the creamy mixture. Gently fold everything together with a spatula, being careful not to mash the eggs too much. Season with salt and pepper to taste.

          Assemble the Sandwiches: Spread a generous amount of the egg salad mixture on two slices of whole grain bread. Add lettuce leaves if desired, then top with the remaining slices of bread.

            Serve: Cut the sandwiches in half and serve chilled or at room temperature.
