Ingredients

1 pre-made pizza dough

1 cup corn kernels (fresh, frozen, or canned)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup crumbled feta cheese

1/2 cup sour cream

2 tablespoons mayonnaise

1 lime, juiced

2 tablespoons fresh cilantro, chopped

1 jalapeño, thinly sliced (optional for extra heat)

Fresh avocado slices (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C) for a crispy pizza base.

Prepare the Corn Mixture: In a skillet over medium heat, add olive oil. Once heated, add minced garlic and sauté for about 1 minute until fragrant.

Add Corn and Spices: Stir in the corn kernels, smoked paprika, chili powder, salt, and pepper. Cook for 5-7 minutes until the corn is tender and slightly charred. Remove from heat.

Prepare the Sauce: In a small bowl, combine sour cream, mayonnaise, and lime juice. Mix until smooth and set aside.

Roll Out Dough: On a floured surface, roll out the pizza dough into your desired shape and thickness. Transfer to a pizza stone or baking sheet lined with parchment paper.

Spread Sauce: Spread the sour cream mixture generously over the surface of the pizza dough, leaving a small border around the edges.

Add Corn and Cheese: Evenly distribute the sautéed corn mixture over the sauce, followed by sprinkling the crumbled feta cheese across the top.

Bake the Pizza: Place the prepared pizza in the preheated oven and bake for 12-15 minutes or until the crust is golden and crispy.

Garnish: Once out of the oven, garnish with fresh cilantro, sliced jalapeño (if using), and avocado slices.

Slice and Serve: Slice your Esquites Pizza into wedges and serve hot with an extra drizzle of lime over the top.
