1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup vegetable oil (for frying)

1/4 cup soy sauce (low sodium recommended)

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sriracha (adjust to taste)

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon red pepper flakes (optional, for extra heat)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

In a medium bowl, combine the cornstarch with garlic powder, ginger powder, and red pepper flakes. Mix well.

    Toss the chicken pieces in the cornstarch mixture until well-coated. Ensure an even coating for crispiness.

      Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the coated chicken pieces in batches, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside on a paper towel-lined plate to absorb excess oil.

        In a separate mixing bowl, whisk together soy sauce, honey, rice vinegar, and sriracha until well combined.

          In the same skillet, remove excess oil, leaving about one tablespoon. Pour the sauce mixture into the skillet and cook for 2 minutes over medium heat until it starts to bubble and thicken slightly.

            Add the fried chicken pieces back into the skillet, tossing to coat them evenly in the sauce. Cook for another 2-3 minutes until the chicken is heated through and well-glazed with sauce.

              Remove from heat and garnish with sliced green onions and sesame seeds.
