1 loaf of crusty French bread, cubed

12 large eggs

2 cups milk

1 cup shredded cheddar cheese

1 cup cooked breakfast sausage, crumbled

1 bell pepper, diced (any color)

1 cup baby spinach, roughly chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 tablespoons butter

For the Country Gravy:

1/2 cup breakfast sausage (casing removed)

1/4 cup all-purpose flour

2 cups milk

Salt and pepper to taste

Instructions

Prep the Casserole: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

Layer the Ingredients: In a greased 9x13-inch baking dish, layer the cubed French bread, crumbled sausage, diced bell pepper, and chopped spinach evenly across the bottom. Pour the egg mixture over the top, ensuring it covers all the ingredients. Finally, sprinkle the cheddar cheese evenly on top of the casserole.

Refrigerate Overnight: Cover the baking dish with cling film and refrigerate overnight (or at least 4 hours) to let the bread soak up the egg mixture.

Bake the Casserole: Preheat the oven to 350°F (175°C). Remove the dish from the fridge and let it come to room temperature for about 15-20 minutes. Bake for 45-50 minutes, or until the casserole is set and golden brown on top.

Make the Country Gravy: In a skillet over medium heat, cook the breakfast sausage until browned. Sprinkle in the flour, stirring continuously for about a minute to combine. Gradually whisk in the milk and continue to stir until the mixture thickens. Season with salt and pepper to taste.

Serve and Enjoy: Once the casserole is done, let it cool for about 5 minutes. Cut into squares and serve hot with a generous ladle of country gravy on top.

              Prep Time: 15 minutes | Total Time: 1 hour 10 minutes | Servings: 8

                - Presentation Tips: Serve the casserole in a large baking dish with a ladle for the gravy next to it. Garnish with fresh herbs, such as chopped parsley or chives, for an appealing touch. Enjoy with a side of fresh fruit for a balanced meal!
