4 fillets of firm white fish (such as cod or halibut)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 can (14 oz) diced tomatoes

1/2 cup black olives, pitted and sliced (Kalamata or Gaeta)

2 tablespoons capers, rinsed and drained

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cooked spaghetti or pasta of choice (optional)

Instructions
 

Prepare the Fish: Pat the fish fillets dry with paper towels and season both sides with salt and pepper.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.

      Add Tomatoes: Pour in the diced tomatoes (with their juices), and stir to combine. Bring the mixture to a simmer.

        Incorporate Olives and Capers: Add the sliced olives, capers, oregano, and basil. Let it simmer for 5 minutes to meld the flavors together.

          Cook the Fish: Carefully place the seasoned fish fillets into the skillet, spooning some sauce over each fillet. Cover the skillet and let the fish cook for about 5-7 minutes or until the fish is opaque and flakes easily with a fork.

            Serve: Once the fish is cooked, remove from heat. Serve the fish topped with ample sauce, and garnish with freshly chopped parsley. Serve with lemon wedges and, if desired, over a bed of cooked spaghetti or pasta.
