Ingredients

1 lb flank steak, trimmed

1 cup cream cheese, softened

1/2 cup roasted red peppers, chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for drizzling

Twine for tying the roulade

Instructions

Preheat your oven to 375°F (190°C).

Lay the flank steak on a clean cutting board, and using a sharp knife, carefully butterfly the steak. Open it up like a book, creating an even thickness throughout.

In a bowl, mix together the cream cheese, roasted red peppers, parsley, basil, garlic, smoked paprika, salt, and pepper until well combined.

Spread the herb cheese mixture evenly over the open flank steak.

Starting from one end, carefully roll the steak tightly into a cylindrical shape.

Use kitchen twine to tie the roulade at intervals, securing the filling inside.

Place the rolled flank steak on a baking dish and drizzle olive oil on top. Season lightly with salt and pepper.

Bake in the preheated oven for about 25-30 minutes, or until the interior reaches your desired level of doneness (about 130°F for medium-rare).

Remove the roulade from the oven and let it rest for 10 minutes before slicing.

Slice the roulade into rings, revealing the colorful filling, and serve warm.
