1 cup cottage cheese (large curd)

3 large eggs, separated

1/4 teaspoon cream of tartar

1/4 teaspoon garlic powder (optional)

1/4 teaspoon onion powder (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper (optional)

1 tablespoon fresh herbs (like chives or parsley), chopped (optional)

Instructions
 

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, combine the cottage cheese, egg yolks, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well combined.

      In a separate bowl, use an electric mixer to beat the egg whites and cream of tartar until soft peaks form. This should take about 2-3 minutes.

        Gently fold one-third of the whipped egg whites into the cottage cheese mixture to lighten it.

          Carefully fold in the remaining egg whites in two more additions until just blended, ensuring you keep as much air in the mixture as possible.

            If using, sprinkle in the chopped herbs and fold gently to combine.

              Scoop the mixture onto the prepared baking sheet, forming rounds about 1/2 inch thick, spacing them a couple of inches apart.

                Bake for 25-30 minutes or until the edges are golden brown and the tops are set.

                  Once baked, remove from the oven and let cool for a few minutes on the baking sheet before transferring to a wire rack.

                    Serve warm as a low-carb bread alternative or use to make sandwiches!
