Ingredients

1 cup cottage cheese

3 large eggs

1/4 teaspoon cream of tartar

1 teaspoon garlic powder (optional)

1/2 teaspoon onion powder (optional)

Salt and pepper to taste

Cooking spray or parchment paper for baking

Instructions

Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper or lightly coat it with cooking spray.

In a mixing bowl, combine the cottage cheese and eggs. Use a hand mixer or whisk to blend the mixture until smooth and creamy.

In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form. This helps to give the cloud bread its fluffy texture.

Gently fold the egg whites into the cottage cheese and egg mixture, making sure to maintain as much volume as possible. Be careful not to deflate the egg whites.

If desired, add garlic powder, onion powder, salt, and pepper to the mixture and fold until just combined.

Using a spoon or spatula, scoop the batter onto the prepared baking sheet, forming 6-8 rounds of about 1/2 inch thick.

Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and the bread is cooked through.

Once baked, remove from the oven and let the cloud bread cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Prep Time: 10 min | Total Time: 40 min | Servings: 6-8 pieces

                    - Serving Suggestions: Enjoy the cloud bread fresh with a spread of butter, herbal cream cheese, or use it as a low-carb sandwich alternative. Serve it with a side of fresh salad for a light meal!
