4 large Yukon Gold potatoes

4 tablespoons unsalted butter

1 cup vegetable stock

1 teaspoon garlic powder

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Peel the Yukon Gold potatoes and cut them into large cylinders, about 2 inches thick. Make sure to trim the ends flat for stability.

      In a large oven-safe skillet, melt 2 tablespoons of butter over medium-high heat.

        Once the butter is sizzling, add the potatoes to the skillet and sear them for 5-6 minutes on each side until they are golden brown.

          When the potatoes are beautifully golden, add the vegetable stock, garlic powder, dried thyme, smoked paprika, and season with salt and pepper. Bring the mixture to a gentle simmer.

            Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the potatoes are tender and the liquid has reduced to a creamy consistency.

              Once done, remove the skillet from the oven and let the potatoes rest for about 5 minutes.

                To serve, use a spoon to scoop and drizzle the sauce from the skillet over the fondant potatoes.

                  Garnish with fresh chopped parsley for a pop of color.
